Ingredients:
- 1 LB Ground Sausage
- 1 Can White Beans
- 1 Medium Onion Diced
- 1 TBSP Minced Garlic
- 4 Large Carrots Diced
- 4 Large Celery Stalks Chopped
- 1/4 Cup Diced Tomato and Jalapeno
- Handful of Spinach
- Olive Oil
- 4 Cups Chicken Broth
- Spices/Herbs : Salt/Pepper. Parsley, Red Pepper Flakes
Preparation:
1. Chop Vegetables
2. Heat pot with olive oil. Add onions and garlic once hot. Be careful not to burn. About 4 minutes . Then, toss carrots and celery in.
4. Add ground sausage, cook through. Season with your spices and herbs.
5. Now, add in jalapeños, diced tomatoes, and white beans. Combine well.
6. Pour chicken broth in and let simmer for about 40 minutes.
7. Roughly chop spinach and add in 15 minutes before serving.
