Cast Iron Egg and Potato Skillet

The vibrant color of this meal gets me hungry every time! It looks professional, yet any home cook is capable of making this delicious dish. Cooking in the cast iron can seem intimidating, but it’s well worth it. Just get someone else to clean it for you 😝! You need minimal ingredients for this recipe, but you can add whatever else you may want! Make it your own. 

Ingredients:

Preparation:

1. Preheat the oven to 400 degrees.

2. Wash and cube the sweet potato. Add to a large bowl with salt, pepper, and garlic powder.

3. Transfer sweet potatoes to a baking sheet and roast at 400 degrees.

4. Dice red onion and halve the tomatoes. Set aside. 

5. Heat olive oil in a cast iron skillet. 

6. Add red onion once skillet is hot. Be careful not to burn. Let this cook for 3-5 minutes. Then, add the tomatoes.  

7. Remove sweet potatoes from the oven and let them finish cooking in the cast iron. 

8. Turn oven setting to broil. 

9. Crack 2 eggs into the middle of the skillet. DO NOT FLIP! Cook for 2-3 minutes. 

10. Transfer skillet to the oven and finish cooking on broil for 3 minutes.

11. Garnish with parsley and red pepper flakes
