Ingredients:
- 3 Eggs
- Salt, Pepper
- Cooked Grilled Chicken (your desired seasoning)
- 1 Cup of Spinach
- Optional: Fresh Mozzarella
- Coconut Oil Spray
- Condiments: Ketchup, Guac
Preparation:
1. Crack 3 eggs into a medium bowl and beat.
2. Add chopped chicken, spinach, and mozzarella to your eggs. Season with salt and pepper.
3. Spray skillet with coconut oil. Heat the pan.
4. Cook the eggs for about 4 minutes and then flip.
5. Fold over once omelet is cooked.
6. Plate and enjoy!
