I first had this dish at an Italian Restaurant in Brooklyn. It was easily one of my favorite dishes on the table. I needed to recreate it from home as best as I could. It came out perfect! This appetizer is high in protein and is light enough to still enjoy all the food afterwards. Give it a try!
- Ready in 20 Minutes
- Serves 4 People
- Appetizer/Side Dish
Ingredients:
- Fresh Uncooked Shrimp - Tail off & Deveined
- 1 Can White Cannelini Beans - Drained and Rinsed
- 1 TBSP Olive Oil
- 1/4 Cup Tomato Sauce
- 1/4 Cup Vegetable Broth
- 1 TBSP Minced Garlic
- 2 or 3 Fresh Basil Leaves
- Spices/Herbs (2TSP Each): Salt/ Black Pepper, Crushed Red Pepper
- Toasted Bread
Preparation:
1. Heat a medium skillet with olive oil and garlic.
2. Essentially, we’re going to start by making a quick marinara sauce. Once your garlic and oil is heated, add in your tomato sauce.
3. Simmer tomato sauce with basil and crushed red pepper.
4. Add the can of white beans and vegetable broth. Stir gently. Cook this down for 5-7 minutes.
5. If you want bread for this dish, now would be the time to toast a few pieces.
6. Add the shrimp to the pan. Cook each side for about 5 minutes.
7. Remove from the heat. Plate and enjoy!
