Ingredients:
- 1 TBSP Olive Oil
- 1 TSP Minced Garlic
- 1/4 Cup Chopped Onion
- 1/2 Can Drained and Rinsed Chickpeas
- 1/2 Can Diced Tomatoes (with liquid)
- Handful of Spinach
- Spices/Herbs (1/2 TSP Each): Sea Salt/Pepper. (1 TSP Each) Paprika, Coriander, Turmeric
Preparation:
1. Heat a medium skillet with olive oil. Once hot, add garlic and onion.
2. Toss the chickpeas into the pan with all the spices/herbs.
3. Lower the heat and add your diced tomatoes. Simmer 6 to 8 mins.
4. Wilt the spinach.
5. Remove from heat. Garnish with fresh squeezed lemon, avocado, cracked red pepper, and a dollop of tzatziki sauce.
