Ingredients:
- 1/2 Cup of Rolled Oats
- 1 TBSP Chia Seeds
- 1 TSP Cinnamon
- 1/2 TSP Pink Salt
- 1/2 Scoop of Protein Powder or Collagen
- 1 Egg White
- 3/4 Cup Liquid of Choice (I use half water, half milk)
- 1 TBSP Lemon Juice
- Lemon Zest
- 1 TBSP Honey
- Fresh Blueberries
- Sliced Almonds
Preparation:
1. In a sauce pot, add oats, chia seeds, cinnamon, pink salt, protein powder, and liquid of choice. Mix to combine.
2. Simmer the oats, mixing often to prevent sticking and burning.
3. Crack one egg white into the oats. Stir well.
4. Zest the lemon into the sauce pot and stir.
5. Add the lemon juice, honey, and a handful of blueberries into the oats. Mix and cook through until liquid is almost fully evaporated.
6. Transfer to a bowl and garnish with toppings: blueberries, almonds, almond butter, drizzle of honey, and a pinch more of lemon zest.
