Ingredients:
- 2 Large Broccoli Crowns
- 4 Large Fresh Carrots - Sliced
- 2 TBSP Olive Oil
- Kosher Salt, Black Pepper
- 1 TBSP Minced Garlic
- 1 TBSP Red Pepper Flakes
- 1 TBSP Parsley
Preparation:
1. Cut, wash, and dry the broccoli and carrots
2. Add broccoli and carrots to a large bowl. Add seasoning.
3. Optional: after vegetables are seasoned, cover your bowl and let them settle in the fridge for up to an hour. You may have to add some more olive oil prior to cooking!
4. Preheat the oven to 400 degrees. Coat a large sheet pan with olive oil and spread vegetables evenly.
5. Roast for 40 minutes or until tender. Toss halfway through.
6. Serve warm and enjoy!
