1. Preheat oven to 350 degrees
2.Peel and chop sweet potatoes. Cook in a skillet with olive oil until tender. Place sweet potatoes in bowl
3. In a medium bowl, whisk the eggs, salt, pepper. Set aside.
4. Heat olive oil on a skillet and add kale, onion, and garlic. Stir until kale is wilted. Add sweet potatoes back into skillet and pour egg mixture over veggies.
5. Cook for about 3 minutes without stirring.
6. Remove from heat and bake in oven for 20 minutes.
