1. Preheat oven to 350
2.Peel and Chop Sweet Potatoes. Cook in a skillet with 1 TBSP Olive Oil for at least 10 minutes until tender. Place sweet potatoes in bowl
3. In a medium bowl, whisk the eggs, salt, pepper. Set aside.
4. Heat 1 TBSP Olive Oil on a skillet and add kale, onion, and garlic. Stir until kale is wilted (4-5 minutes). Add sweet potatoes back into skillet and pour egg mixture over,
5. Cook for about 3 minutes without stirring.
6. Remove from heat and place in oven for the frittata to bake between 16-18 minutes.
