Ricotta Pesto Blueberry Crostini

I made this quickly as an extra appetizer for company. I looked in my fridge and pulled random ingredients that might make sense. To my surprise, my random ingredients created one of my favorite combos. This toast is mild, sweet, and hearty. The aromatic and fresh undertones from the ricotta pesto creates a delicate blend with the sweet and citrusy topping from the blueberries and lime. 



1. Mix ricotta, pesto, salt and pepper in a small bowl.

2. Spread ricotta mixture on toast.

3. Top your mixture with blueberry preserves and a squeeze of lime.

4. Chill in fridge until ready to serve.
